Seafood Boats

Servings: 4

Ingredients:

¼ cup plain yogurt or low-fat mayonnaise 
2 teaspoons reduced-sodium soy sauce
½ teaspoon garlic powder
¼ teaspoon ground ginger
Juice of ½ lime (optional)
2 (5-7 oz) cans of tuna or salmon, drained
1 green onion
1 carrot
About 8 lettuce leaves (Romaine, green leaf, and butter lettuce work well)

Directions:

  1. *In a bowl, mix together the yogurt or mayo, soy sauce, garlic powder, ground ginger, and optional lime juice. 
  2. Stir in drained tuna or salmon.
  3. Finely chop the green onion, grate the carrot, and add to the bowl.  
  4. *Mix all ingredients well.
  5. Scoop spoonfuls onto the lettuce leaves (makes 2 “boats” or lettuce wraps per person) and eat like a taco!
