½ package of lasagna noodles (10 pieces)
1/8 teaspoon garlic powder
1/8 teaspoon onion powder
1 teaspoon Italian seasoning
1 1/2 cups frozen spinach, thawed
1/4 cup parmesan cheese, grated
1/2 cup low-fat, cottage cheese
3/4 cup ricotta cheese
1/2 cup cup low-fat mozzarella cheese, grated

Ingredients:
Directions:
- Preheat oven to 375 degrees.
- Boil noodles according to package, drain, and set aside.
- Transfer thawed spinach to a colander to drain and squeeze out excess moisture. Set aside.
- In a medium sized bowl, combine cottage, ricotta, parmesan, and 1 Tbsp of mozzarella cheese.
- Stir in spinach, Italian seasoning, garlic powder, and onion powder.
- Pour 1/2 cup of spaghetti sauce in baking pan or casserole dish to cover the bottom.
- On a flat surface, lay noodles out one at a time.
- Spread each boiled lasagna noodle with cheese mixture along full length, and then roll it up (about 2 Tbsp).
- Place rolled noodles in the baking pan/casserole dish, seams down and sides touching.
- Pour remaining sauce over rolled up noodles and top with the remaining mozzarella cheese.
- Bake in the oven until cheese is melted and sauce is bubbly - about 25 minutes.
