Fresh Thyme Marinade

Servings: 10

Ingredients:

1 onion chopped
2 garlic cloves crushed
1/4 green pepper chopped
1/4 red pepper chopped
1 teaspoon chopped thyme
1 tablespoon extra virgin olive oil
1/2 teaspoon black pepper
1 dash ginger
1/2 cup fresh lime juice

 

Directions:

  1. Combine ingredients in blender and process until peppers and onions are finely chopped.
  2. Pour over chicken/fish and rub into skin. Cover and refrigerate overnight or 4 hours minimum.
  3. Makes approximately 1 cup
