Edamame and Corn Succotash

Servings: 6

Ingredients:

2 teaspoons vegetable oil
1/2 cup red bell pepper, chopped
1/2 onion, chopped
2 cloves garlic, minced
1 1/2 cups frozen shelled edamame
2 cups frozen corn
3 Tablespoons vegetable broth
1/2 teaspoon salt
1/4 teaspoon black pepper
2 Tablespoons fresh parsley, chopped
1 teaspoon dried basil

Directions:

  1. Heat oil in a large skillet over medium heat.
  2. Add bell pepper, onion and garlic.
  3. Cook, stirring frequently, for 2 minutes.
  4. Stir in edamame, corn, and vegetable broth.
  5. Cook 4 minutes, stirring frequently.
  6. Remove pan from heat.
  7. Stir in salt, pepper, parsley, and basil.
