Easy Peanut Noodles

Servings: 4

Ingredients:

½ cup peanut butter, smooth or crunchy
½ cup warm water
3 Tablespoons low sodium soy sauce
2 cloves garlic, minced
2 Tablespoons fresh lime juice
1 Tablespoon brown sugar, honey or maple syrup
1 Tablespoon fresh minced ginger or ¼ teaspoon ground dry ginger
1 teaspoon sesame oil (optional)
2 teaspoons any type of hot sauce (optional)

 

Ingredients for pasta “noodles”
1/2 box (about 8 ounces) whole wheat spaghetti or linguine
1 bell pepper, chopped
1 medium carrot, peeled and cut into thin strips or shredded
2 green onions (scallions), chopped
Fresh cilantro, chopped (optional)

Directions:

  1. Cook pasta according to package instructions.
  2. While pasta is cooking, whisk together the peanut butter and warm water in a small bowl until blended and smooth.
  3. Add all other sauce ingredients and whisk to combine.
  4. Drain pasta and return to the pot. Add the peanut sauce, pepper, carrot, and green onion. Toss well to combine.
  5. Top with optional cilantro.
