Cowboy Caviar

Ingredients:

1 (15-ounce) can kidney beans, drained
1 (15-ounce) can black beans, drained
1 (15-ounce) can corn, drained
1 (15-ounce) can crushed tomatoes
1 (4-ounce) can chopped green chilies
1 small onion, chopped
3 limes juiced
1 Tablespoon vegetable oil

Directions:

  1. Mix kidney beans, black beans, corn, tomato, chilies, and onion in a large bowl. 
  2. Add lime juice, and oil; toss gently to combine.
  3. Serve by itself or with whole grain tortilla chips.
