- In a skillet, heat the olive oil, chopped garlic, and chopped onion.
- Sauté ingredients for a few minutes until the garlic is slightly brown.
- Drain and rinse the can of beans and add to the pan. Mash the beans into the oil, garlic, and onion.
- Mix the ingredients in the skillet.
- Warm-up the corn tortillas.
- Spoon the beans onto the warm corn tortillas, add some shredded mozzarella cheese and one teaspoon of low-fat sour cream.
