Leafy Greens 5 Ways

Soups & Stews
Add watercress, Swiss chard, kale, fenugreek, or escarole to soups and stews. For a smoother texture or to help thicken the broth, greens can be pureed and added before serving.


Stir Fry
Mix cabbage and bok choy in a stir fry with brown rice or quinoa and fresh or frozen vegetables like broccoli, carrots, peppers, and onions. Add beans, chicken or tofu to complete the meal.


Pasta
Combine leafy greens like beet greens, chard, or fenugreek to your favorite whole grain pasta dish to add color and flavor. Want more veggies? Blend leafy greens, like spinach or arugula, and add to tomato or pasta sauce.


Egg Dishes
Mix in greens like spinach, chard, or beet greens in your egg omelet or quiche. Add more vegetables like mushrooms, peppers, tomatoes and onions. Season with fresh or dried herbs like parsley, thyme, basil, and dill.

 

Sandwiches & Wraps
Use chard, cabbage, or collards to create your sandwich or wrap. Add vegetables like chopped carrots, cucumbers, onions and avocado. Include lean proteins such as canned tuna, chicken, or turkey.
