1 cup dried lentils
5 cups water
2 Tablespoons vegetable oil
¼ onion, finely chopped
1 (8 ounce) canned tomato sauce or 1 (15 ounce) can diced tomatoes
½ teaspoon garlic powder
1 teaspoon salt
¼ teaspoon black pepper
1 teaspoon dried Italian seasoning
1 celery stalk, washed and chopped
1 carrot, washed and sliced
2 Tablespoons vinegar

- Place lentils in a large pot, and add water.
- Bring to a boil and add all ingredients except vinegar.
- Reduce heat and cover.
- Cook on low heat for 1 hour.
- Stir in vinegar.
