1 Tablespoon olive oil
½ teaspoon turmeric
½ teaspoon cinnamon
Pinch of cayenne pepper, optional
2 Tablespoons brown sugar, packed

Directions:
- Preheat oven to 425 degrees F. Line a large baking sheet with parchment paper or rub with extra oil.
- Slice carrots in ½-inch pieces, on a diagonal angle and add to a medium bowl.
- Mix oil, spices and brown sugar in a small dish, then pour over the bowl of carrots. Toss well to coat. Transfer to baking sheet.
- Cook 18-20 minutes, or until carrots are just tender and slightly browned.
- Top with a pinch of sea salt, if desired.
