Simple Sweet Potato Toast
Servings: 4-5
Ingredients:
Directions:
- Preheat oven to 400 degrees.
- Line a baking sheet with parchment paper or foil to prevent sticking or place a wire rack on a baking sheet with a rim.
- Slice off the ends of the sweet potato, then cut it lengthwise into ½-inch thick slices. Place slices in a single layer on baking sheet or rack.
- Bake 15 to 20 minutes, or until the slices are tender and easily pierced with a fork, but not too soft. Remove from oven and cool. (Store in refrigerator up to 4 days.)
- Place sweet potato slices in a toaster or toaster oven and toast until hot and edges are crispy.
- Top with any of the above toppings or make up your own.
