Easy Pea-sy Avocado Toast

Servings: 5

Ingredients:

1 cup green peas, frozen (remove from freezer and thaw in refrigerator overnight)
½ avocado
1 lime, juiced
½ teaspoon salt
2 Tablespoons fresh cilantro (optional)

 
To create faces on the toast:
5 slices whole wheat bread
10 black olive slices
5 Cherry tomatoes, sliced
2 radishes, sliced into 10 rounds

Directions:

  1. Place green peas in a bowl and smash with a fork until mostly smashed and chunky.
  2. Scoop half the avocado out of the skin using a spoon and add it to the bowl with the peas.
  3. Add lime, salt and cilantro (optional) and mash everything together until slightly lumpy.

 
To create faces on the toast:

  1. Toast the bread in a toaster, oven or griddle until lightly browned.
  2. Spread avocado mixture evenly onto pieces of toast
  3. Use the radishes and olives to make the eyes and tomato slices to make a mouth.
  4. Add additional toppings or seasonings as desired.
