1 box whole grain pasta
2 Tablespoons vegetable oil
1 large onion, chopped
3 garlic cloves, chopped
1 bunch kale, washed and chopped, stems removed
2 cups cooked chicken, chopped

¼ cup Parmesan cheese, grated

Directions:
- Preheat oven to 350 degrees.
- In a large pot of boiling water, cook pasta according to package instructions.
- Drain pasta.
- In same pot, add oil, onion, and garlic over medium-high heat. Cook 4 minutes.
- Add kale, cover, and cook until almost tender, about 5 minutes.
- Add pasta back to pot.
- Stir in chicken, cottage cheese, and salt and pepper to taste.
- Transfer mixture to a 9-by-13-inch baking dish.
- Top with Parmesan cheese. Bake until top is golden, 30 minutes.
